Spicy Sweet Potato (a.k.a. Spring is Still Too Cold!) Soup

Ingredients

  • olive oil
  • 1/2 chopped onion
  • 1 stalk chopped celery
  • 1 chopped Hungarian wax pepper
  • 1 tsp. minced garlic
  • 1 deseeded, chopped serrano
  • salt & pepper (to taste)
  • large sweet potato
  • 1 Andouille smoked sausage
  • 14.5 oz. can diced tomatoes
  • 32 oz. chicken broth
  • 16 oz. water
  • 2 TBS Better Than Bouillon Roasted Chicken Base
  • 15 oz. can black beans, drained & rinsed
  • halved mushrooms (almost a whole pkg.)
  • kale (1 cup, rinsed & ripped)
  • the kitchen sink, for good measure

Process:

  1. Cover the bottom of a pot with olive oil, burner on low heat.
  2. Add chopped onion, celery, pepper, serrano & garlic. Add salt & pepper. Cook about 3 minutes.
  3. Add chopped sweet potato and stir. Cook a few more minutes.
  4. Add chopped sausage, stir and cook a few more minutes.
  5. Throw in tomatoes. (I had no-salt added tomatoes, so I added more salt & pepper).
  6. Pour in chicken broth and bring to a boil.
  7. Heat 32 ozs. of water to boiling and stir in 2 TBS of bouillon base & add to soup.
  8. Add in black beans and cook for a few more minutes.
  9. Toss in mushrooms and cook a little bit longer.
  10. Rip up kale, add in soup & cook a few more minutes.
  11. El fin! Enjoy!

In classic C.S.M.A.D. fashion, I began a day off of from my essential job by heading out for groceries, cleaning dishes and clothes, painting a hallway…and then looking for something else to expend my energy on. And, so, it was time to experiment with time lapse. Spicy Sweet Potato (Spring is Still Too Cold!) Soup was born.

The creative spirit in me doesn’t work well with actual measuring or time limits, so please forgive the “few minutes” in the directions; I just go with the flow. I also like to make the best use of the ingredients that I have on hand, therefore, Spicy Sweet Potato Soup is a cousin to Resurrection Soup, made this past Easter Sunday. One of the four teenagers present in the house voted that this soup is delicious. (It’s true that it is preferred by a mature palate that respects healthy nourishment.) If there is ever a below-70-degree day in Mexico, TacOcaT will certainly (well…possibly, maybe) serve a soup similar to this one.

Surely due to the present quarantine status of planet Earth, it feels like a blessing to be able to deliver soup to the front doors of grandparents and to provide lunch for my fabulous work buddy. Furthermore, I now have two new goals: Learn how to slow down various clips of a time lapse video and try my hand at a few new recipes that can be eaten without a spoon.
